Production of snakehead fish (Channa striata) extract dispersion by homogenization method

Snakehead fish has a variety of nutritional content needed, both for maintaining body health and as medicine. However, not everyone can consume snakehead because it fishy aroma. So that various innovations emerged to overcome this, one which was make dispersion product extract dietary supplement. The previously produced is still unstable. Dispersion will be stable when small particle size. One way reduce the size by using homogenization method. This study aimed obtain best conditions making method with variations in speed time. used this manufacture 21,500 rpm 24,000 Ultra Turrax T25 10 minutes 20 minutes, then analysed phase separation ratio. results showed relatively large, ranging from 3.09 µm – 4.09 µm.
